One of my absolute favorite gluten free desserts and so so simple
You will need
10 oz of semisweet chocolate wafers (I prefer Guitard ) so yum
7 T of unsalted butter cut into pieces
6 eggs room temperature
1 C sugar
1 tsp cinnamon
3/4 tsp chipotle chili powder
Dash of cayenne
1/2 tsp salt
Powdered sugar to dust
Preheat your oven to 350 degrees . Line bottom of a springform pain with a circle of parchment paper , make sure you grease the sides with butter or cooking spray .
Melt butter and chocolate together over s double boiler in stove or you can microwave until it's smooth .. (I prefer double boiler and a whisk .
Whisk together the eggs and sugar in a large bowl and very slowly add a little of the chocolate mixture at a time ... (this part is important so it doesn't seize up. Add the salt and spices to the mixture
Pour it all into a springform pan and bake for 24-26 min or until toothpick comes out clean . Let it cool completely on a wire rack and let it loose from springform ....
Dust with powdered sugar . You can just lightly with a sifter or you can make a circle with the parchment and use your second grade snowflake skills to make a pretty design on top !! Get creative. I have even put a fork and a spoon crisscross on top and sprinkle powdered sugar.
